Hi folks! This is a great one for the weekend. Serve with my crispy chia seed chicken, or some Asian roast pork. Delicious.
This recipe takes around 10 minutes to make, super easy, so doubles up well as a quick midweek lunch.
You will need:
- 4 courgettes- 2 yellow, 2 green, julienned.
- 4 salad onions, finely sliced.
- 4 carrots, julienned.
- 1/2 white cabbage, finely sliced.
- 10 brussel sprouts, grated.
- 10 radishes, grated.
For the Mango Sauce
- 1 mango, diced
- 1 /2 white onion, sliced
- 1/2, chili
- 1 lime, juiced.
For the Pad Thai, simply add the raw ingredients to a bowl, and dress with plenty of lime juice and a splash of olive oil. For a richer dressing, add coconut milk and a spoonful of almond butter mixed together.
For the Mango Sauce, simply add all ingredients to a blender, and puree! Easy.
