Paleo Egg, Mushroom and Chicken Muffins


Hi folks!

Sorry I haven’t blogged for a while. I’ve been a busy bee, working on other projects. This morning I decided I wanted a “proper” breakfast- I’m feeling a touch bored of super speedy scrambled eggs and out the door. This recipe is delicious. Perfect for breakfast, or to serve up with a salad for lunch or supper. You can cook in batch and will last for a few days.

See if you can spot my food styling disaster on the shot above! I’ve managed to add something a little bit stringy to the composition! haha! Whoops. It still tasted scrumptious!


Paleo Egg and Mushroom Muffins

  • 2 Eggs
  • 1 handful shredded chicken
  • 2 mushrooms diced
  • Young cilantro, handful
  • Spring onion, handful


  1. In a bowl, whisk the eggs, add the chicken, cilantro and onion. Mix.
  2. Heat the over to 275 degrees.
  3. Add a splash of olive oil. Add the diced mushroom and cook for 5 minutes.
  4. Now pour in the egg mix.
  5. Bake for 10 minutes.
